Samoan island cocktail

Bring a taste of the tropics to your palette with this cocktail, bursting with zesty colour and fruity flavour.

Ingredients
- 2 ripe mangoes
- 1 litre (1 3/4pts) orange and mango juice
- juice of 1 lime
- 100ml (3 1/2fl oz) Malibu white rum with coconut
- 100ml (3 1/2fl oz) Cointreau
- ice to serve
Instructions
- Peel and stone the mangoes and cut the flesh into chunks. Purée in a blender with the lime juice and a little orange and mango juice.
- Add the remaining juice, Malibu and Cointreau. Pour into 6 glasses, add ice and serve.

Passion fruit, lemon and gin Collins

Serves 2
Combine passion fruit with lemon and a splash of gin for this vibrant and sweet cocktail.
Prep Time

Ingredients
- 60ml (2 1/2fl oz) dry gin
- 60ml (2 1/2fl oz) fresh lemon juice
- 2 passion fruits, halved
- 30ml (1 1/2fl oz) sugar syrup
- 2 handfuls ice cubes
- Soda water
- Lemon wedges, to garnish
Instructions
- In a small jug or cocktail shaker, combine the gin, lemon juice, passion fruit pulp and seeds and sugar syrup. Give everything a good stir or shake.
- Fill 2 highball glasses with ice and divide the gin mixture between each. Top up with soda water and garnish with a lemon slice. Serve immediately.
Notes
- Top tip: If you don't have time to make your own sugar syrup, swap it for a squeeze of honey.

Strawberry blonde brewjito

A delicious fruity cocktail like this is sure to quench your thirst on a summer's evening and impress your guests at the same time.
Prep Time

Ingredients
- 10 ripe strawberries
- 2 sprigs of mint
- juice of 1 lemon
- 4 x 50ml (2fl oz) measures of Bacardi or white rum
- 1 large 75cl bottle of Blonde Beer (Leffe is a great beer to use), chilled
- 2tbsp brown sugar dissolved in a little hot water
Instructions
- In a large bowl, use a stick blender to purée eight of the strawberries.
- Crush the mint leaves with lemon juice and dissolved sugar using the end of a rolling pin. Add the strawberries to the mix.
- Mix in the Bacardi rum and add some ice cubes.
- Slowly pour in the beer and mix gently to combine with the other ingredients.
- Serve over ice in tumbler glasses, garnished with the two remaining strawberries quartered as a garnish.
Notes
- Top tip: With beer cocktails its important not to shake them, as this causes the beer to foam vigourously and then loose its fizz.
