Samoan island cocktail
Serves 6
Bring a taste of the tropics to your palette with this cocktail, bursting with zesty colour and fruity flavour.

Ingredients
  1. 2 ripe mangoes
  2. 1 litre (1 3/4pts) orange and mango juice
  3. juice of 1 lime
  4. 100ml (3 1/2fl oz) Malibu white rum with coconut
  5. 100ml (3 1/2fl oz) Cointreau
  6. ice to serve
Instructions
  1. Peel and stone the mangoes and cut the flesh into chunks. Purée in a blender with the lime juice and a little orange and mango juice.
  2. Add the remaining juice, Malibu and Cointreau. Pour into 6 glasses, add ice and serve.

Passion fruit, lemon and gin Collins
Serves 2
Combine passion fruit with lemon and a splash of gin for this vibrant and sweet cocktail.

Ingredients
  1. 60ml (2 1/2fl oz) dry gin
  2. 60ml (2 1/2fl oz) fresh lemon juice
  3. 2 passion fruits, halved
  4. 30ml (1 1/2fl oz) sugar syrup
  5. 2 handfuls ice cubes
  6. Soda water
  7. Lemon wedges, to garnish
Instructions
  1. In a small jug or cocktail shaker, combine the gin, lemon juice, passion fruit pulp and seeds and sugar syrup. Give everything a good stir or shake.
  2. Fill 2 highball glasses with ice and divide the gin mixture between each. Top up with soda water and garnish with a lemon slice. Serve immediately.
Notes
  1. Top tip: If you don't have time to make your own sugar syrup, swap it for a squeeze of honey.

Strawberry blonde brewjito
Serves 4
A delicious fruity cocktail like this is sure to quench your thirst on a summer's evening and impress your guests at the same time.

Ingredients
  1. 10 ripe strawberries
  2. 2 sprigs of mint
  3. juice of 1 lemon
  4. 4 x 50ml (2fl oz) measures of Bacardi or white rum
  5. 1 large 75cl bottle of Blonde Beer (Leffe is a great beer to use), chilled
  6. 2tbsp brown sugar dissolved in a little hot water
Instructions
  1. In a large bowl, use a stick blender to purée eight of the strawberries.
  2. Crush the mint leaves with lemon juice and dissolved sugar using the end of a rolling pin. Add the strawberries to the mix.
  3. Mix in the Bacardi rum and add some ice cubes.
  4. Slowly pour in the beer and mix gently to combine with the other ingredients.
  5. Serve over ice in tumbler glasses, garnished with the two remaining strawberries quartered as a garnish.
Notes
  1. Top tip: With beer cocktails its important not to shake them, as this causes the beer to foam vigourously and then loose its fizz.
